Strawberry Melon Brownie Cheesecake

Watermelon in a cheesecake? Are we crazy, you ask? Well, maybe a little... but that doesn't stop this unconventional cheesecake from being as delicious as it is! With half a watermelon, tons of fresh strawberries, chocolate Pocky sticks, and a beautiful brownie base, this is one cheesecake you've got to try. We guarantee you'll want to make it again and again!

You'll Need:

For the brownie crust:

  • 6 eggs
  • ⅔ cup brown sugar
  • ⅔ cup sugar
  • ⅔ cup semi-sweet chocolate chips, melted
  • ½ cup semi-sweet chocolate chips
  • 2 sticks butter, melted
  • 1 cup flour
  • 1¼ cups cocoa powder
  • 1 tsp baking powder

For the strawberry melon filling:

  • 1 small watermelon
  • chocolate Pocky sticks
  • 2 lbs fresh strawberries
  • 1 cup strawberry topping

For the cheesecake cream:

  • 2 cups cream cheese
  • zest of 1 lime
  • 1 vanilla bean
  • ⅓ cup powdered sugar
  • 2 cups heavy cream

For the decoration:

  • sliced strawberries
  • whole strawberries
  • grated chocolate
  • mint leaves

Here's How:

1. For the brownie crust, beat the eggs, brown sugar, and sugar with a hand mixer until frothy. Add the melted chocolate, chocolate chips, and melted butter to the mixture, sieve in the flour, cocoa powder, and baking powder, and stir until combined. Pour the brownie batter into a greased 9-inch cake pan and cook in a preheated oven at 350°F for 25 minutes.

2. Cut a small watermelon in half and remove the rind. Once the brownie crust has cooled, transfer it to a cake plate and place the halved watermelon on top.

3. Break off the chocolate ends of the Pocky sticks and push them into the tops of the strawberries. Push the other ends into the watermelon until the entire surface is covered. Pour the strawberry topping over the strawberries.

4. Combine the ingredients for the cheesecake cream in a 9-inch glass bowl. Flip the bowl with the cheesecake cream over and gently push it down over the strawberries until it reaches the brownie crust. Refrigerate the entire thing for 4 hours.

5. After 4 hours, carefully remove the glass bowl. If the bowl doesn't come off easily, wait a few minutes and try again – it sometimes needs to warm up a bit first. Decorate the strawberry melon brownie cheesecake with sliced strawberries, whole strawberries, grated chocolate, and mint leaves.
