How to Bake a Strawberry Butter Cake
Sheet cakes are a great invention. They are usually easy to prepare and extremely satisfying. Despite all of the variations of sheet cakes, the butter cake remains la grande dame of the cake-style. It consists of only a few ingredients and can be remade again and again depending on the season. How about a strawberry butter cake now that strawberry season is here?
Preparing strawberry buttercake is hardly any different from the classic butter cake. But, keep some extra fresh berries on hand, to make sure your cake has a fruitier, juicier note. Plus, topping the cake with sliced almonds and a layer of sugar will provide crunch and sweetness. Mmm, delicious. Who could resist that?
For the butter cake, start by making the yeast-rich dough. To do this, dissolve the yeast in lukewarm milk. In a separate bowl, cream together the flour, sugar, vanilla extract, salt, egg and soft butter. Once uniform, pour in the yeast milk and knead everything into a smooth dough. Cover it and let it rise in a warm place for an hour. The dough should rise considerably in this time.
Now, roll out the dough and place it on a baking sheet. Top it off with fresh quartered strawberries. Spread the flaked butter between the strawberries and sprinkle everything with a good amount of slivered almonds and sugar. Now, your cake is ready to go into the oven. Let it bake for 25 minutes. When the cake is golden brown and smells wonderful, it is ready to come out! Let it cool before serving, as hard as the wait is. Strawberry Butter Cake

- 1 12 x 16 in. baking sheet
Ingredients
For the batter:
- 2¼ tsp active dry yeast
- 1 cup lukewarm milk
- 4 cups all-purpose flour plus more for dusting
- ⅔ cup sugar
- 1 tsp vanilla extract
- 1 pinch of salt
- 1 egg
- ½ cup softened butter
For the topping:
- 1 lb fresh strawberries
- ½ cup butter
- 1 cup sliced almonds
- ¼ cup sugar for sprinkling
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Dissolve the yeast in the lukewarm milk.
- Add the flour, sugar, vanilla sugar, salt, egg, and softened butter to a mixing bowl. Pour in the yeast mixture and knead everything into a smooth dough.
- Let the dough rise, covered, in a warm place for about an hour, or until it has visibly increased in volume.
- Wash and hull the strawberries, then quarter them.
- On a floured work surface, usea rolling pin to roll out the dough. Make it roughly the same size as your baking sheet. Carefully place it on the sheet.
- Spread the strawberries evenly over the dough.
- Dot the dough with small pieces of butter and sprinkle with sliced almonds. Dust the cake with sugar.
- Bake the cake in the preheated oven for about 25 minutes, until golden brown.
- Let the cake cool completely after baking and then serve it, for example, with a scoop of ice cream.
