Strawberry Banana Pancake Skewers

Mini strawberry pancakes get stacked up next to fresh strawberries and bananas, dipped in chocolate, coated in fun toppings, and then garnished with a homemade mint pesto. Ingredients:

For the mini strawberry pancakes:

  • 1 lb strawberries
  • 3 eggs
  • 1⅔ cups flour
  • ¼ cup sugar
  • 3 tbsp sunflower oil
  • 1 cup milk

For the skewers:

  • banana slices
  • strawberry slices
  • melted white chocolate
  • melted dark chocolate
  • sprinkles
  • freeze-dried strawberries
  • graham cracker crumbs

For the mint pesto:

  • ½ bunch of fresh mint
  • ⅓ cup vegetable oil
  • ½ cup slivered almonds
  • 3 tbsp sugar

Instructions:

1. For the mini strawberry pancakes, combine the strawberries, eggs, flour, sugar, sunflower oil, and milk and puree with an immersion blender until smooth. Pour the pancake batter into a plastic bottle with a lid. Remove the lid from the bottle, heat the tip of a screwdriver, and use it to poke a hole through the middle of the lid. Once the lid has cooled completely, screw it back onto the bottle. Alternatively, you can pour the pancake batter into a ready-made squeeze bottle. Slightly grease a pan and heat it over medium heat. Use the squeeze bottle to portion out 10 mini pancakes on the pan and cook on both sides until slightly browned.

2. Prepare 2 wooden skewers with mini strawberry pancakes, banana slices, and strawberry slices.

3. Dip the first pancake skewer in melted dark chocolate and dip the other pancake skewer in melted white chocolate.

4. Roll the chocolate-coated pancake skewers through sprinkles, graham cracker crumbs, and freeze-dried strawberries while the chocolate coating is still warm.

5. For the mint pesto, add the mint leaves, vegetable oil, slivered almonds, and sugar to a blender and blend until combined. Drizzle the mint pesto over the strawberry banana pancake skewers before serving.
