Spinach-Stuffed Hasselback Chicken Breast — Stuffed With Spinach & Coated with Cheese

When it comes to cooking, taste is important, but creativity and experimentation shouldn't be underestimated. Unfortunately, many people fall into a rut in the kitchen and end up making the same old dishes time after time. Some of us tend to forget that there's a whole world of amazing culinary ideas and exotic flavors out there and its just begging to be explored. With this in mind, we've taken a simple chicken breast and done something quite exciting with it.

You'll Need (for 2 portions):

  • 2 chicken breasts
  • salt & pepper
  • olive oil
  • 2½ oz fresh spinach
  • 1 oz ricotta cheese
  • 1 oz shredded cheddar cheese
  • paprika

Here's How:

  1. Make evenly-spaced widthwise slits in the top of the chicken breast and sprinkle on salt and pepper.
  2. Heat the olive oil in a pan and add the spinach. Once it has wilted, add some salt and pepper. Now mix in the ricotta cheese.
  3. Spoon the spinach mixture into the slits in the chicken breast. Cover the breasts with cheddar cheese and sprinkle with paprika. Bake in the oven for 20 minutes at 350°F.
