Fresh cilantro gives this watermelon salad its characteristic flavor. This herb, which can be quite polarizing, brings a citrusy freshness with slightly peppery undertones. The lime provides the necessary acidity, which combines all the flavors and balances the sweetness of the melon. Together with a pinch of salt and some chili, the dish carries a flavor profile that is both refreshing and stimulating.
