Sliced Potatoes Casserole With Bacon And Cheese

  • 10 large potatoes, sliced

  • salt & pepper to taste
  • 25 slices of bacon

For the cheesy center:

  • 1 camembert cheese wheel
  • rosemary sprigs
  • 2 garlic cloves, halved

For the herb marinade:

  • 3 tbsp olive oil
  • 1 bunch of parsley, chopped

Here's How:

1. Wash the potatoes and cut them into thin slices, keeping the skin on. Toss the sliced potatoes in olive oil, season with salt and pepper, and let the potatoes marinate for 10 minutes.

2. Grease a casserole dish with butter and place the camembert cheese wheel in the center of the dish. Position the casserole dish at an angle to make it easier to arrange the ingredients. Place 2 potato slices at the upper far corner of the casserole dish and cover them with a slice of bacon. Place 2 more potato slices in front of the bacon and fold the rest of the bacon strip over the potatoes. 

3. Repeat this process, alternating between potatoes and bacon until you've filled the casserole dish. Cut a grid pattern into the top of the camembert cheese wheel and stick some rosemary sprigs and halved garlic cloves into the cuts. For the herb marinade, chop the parsley and stir it into the olive oil. Generously spread the marinade over the bacon and potatoes.

4. Transfer the casserole dish to a preheated oven and cook at 400°F for 45 minutes. Remove the dish from the oven and cut off the top layer of the camembert cheese wheel so that the melted cheese oozes out.
