Asian Fusion Roast Beef Volcano Bowl With Sushi Rice, Fried Egg, And Yum Yum Sauce

Roast beef is a classic meat dish worldwide, and for good reason! You can't beat the tender, juicy texture and aromatic flavors of roast beef. Although traditional roast beef might get cooked in the oven for Sunday dinner or get sandwiched between 2 slices of bread for lunch, this new dish is going to change the way you eat it from here on out! We're serving up an enormous roast beef volcano filled with a flavorful sushi rice core, inspired by both Japanese and Korean cuisines. Top this enormous roast beef volcano off with a fried egg and some Japanese steakhouse sauce, and you have yourself a dish that's absolutely erupting with flavor!

You'll Need:

For the Asian fusion rice:

  • ½ cup sushi or arborio rice, cooked
  • ¼ cup kimchi, sliced
  • 1 tbsp pickled ginger 
  • ⅓ cup chopped cilantro
  • 3 tbsp black & white sesame seeds
  • 1 tsp minced chili pepper 
  • 2 tsp mirin
  • 1 tbsp rice vinegar
  • 2 tsp salt
  • 1 tsp sesame oil

For the roast beef:

  • ½ lb beef
  • vegetable oil for frying 
  • 3 tbsp lime zest
  • 2 tbsp chopped lemongrass
  • ⅓ cup pepper
  • 2 tsp salt

For the toppings:

  • 2 egg yolks
  • yum yum or Alfredo sauce
  • arugula for the garnish

Here's How:

1. Preheat the oven to 175°F. Heat an oven-safe frying pan on the stove with some vegetable oil and sear the beef on all sides. Transfer the frying pan to the oven and cook the beef at 175°F for 30–45 minutes. Remove the roast beef from the oven and use a meat thermometer to make sure that it has a core temperature of approximately 130°F. Stir together the salt, pepper, and lime zest, then roll the roast beef in the mixture. Let the roast beef rest at room temperature for 1 hour, then transfer it to the refrigerator and let it chill for 30 minutes. Once the roast beef has chilled, cut it into thin slices.

2. While you're preparing the beef, cook the sushi or arborio rice, then let it cool for about 30 minutes. Once the rice has cooled, add in the other ingredients for the Asian fusion rice and stir until combined. Spoon the rice into a cup with a 3-inch diameter, then flip the cup over onto a serving plate or platter to create a colorful mound of rice.

3. Cover the mound of rice with the slices of roast beef and form a crater at the top.

4. Heat a frying pan on the stove, place 2 wooden skewers that have 1 wide end on them in the hot frying pan, and drizzle some vegetable oil over both of the wide ends. Separate the eggs and slide 1 egg yolk onto each of the wide ends of the wooden skewers. Turn off the stove and wait for the egg yolks to cool down. After about 5 minutes, carefully remove the egg yolks from the pan and place them in the crater of the volcano.

5. Pour the yum yum or Alfredo sauce over the roast beef volcano and serve with fresh arugula.
