Love at first bite: Ricotta-Stuffed Pasta Shells

The only thing better for pasta for dinner? Pasta stuffed with cheese, of course! Thank goodness for shells, which can be filled to suit individual palates. This particular recipe is sure to take your taste buds to new heights: 

You will need:

  • 9 large pasta shells 
  • 1/2 cup ricotta
  • 4 tbsp grated parmesan
  • 1/3 cup grated mozzarella
  • 2 tbsp fresh basil
  • salt and pepper
  • 2 cups puréed tomatoes 
  • 1/4 cup olive oil

Here's how:

  1. Boil the shells for about 10 minutes in salt water. They do not have to be completely done. 
  2. In a small bowl, thoroughly mix the ricotta, parmesan, mozzarella, and basil. Carefully spoon the mixture into the cooked pasta shells. 
  3. Pour the puréed tomatoes into a casserole dish and place the stuffed pasta shells on top, the openings facing upwards. Drizzle the olive oil over the shells, and add a little extra grated mozzarella. Now bake for 30 minutes at 320 °F.

Feel free to spice up the tomato purée with seasonings of your choice. Serve and enjoy!
