Share the love: Raspberry Cream Roll

Without a doubt, a sponge roll is the perfect way to bring joy to your dining table when it's time for dessert. The combination of the different tastes and textures of the fluffy dough and the jam and cream filling make for a real taste explosion! If your mouth is already watering, this recipe for a Raspberry Cream Roll could be just what you're looking for!

You'll need:

For the dough:

  • 6 eggs
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • 1 cup flour

For the filling:

  • 2/3 cup cream
  • 3 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh raspberries 
  • 1/2 cup raspberry jam

For the decoration:

  • 2/3 cup cream
  • 3 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • a few more fresh raspberries

Here's how:

  1. Separate the egg whites from the egg yolks, put the egg whites into a bowl and beat until they are stiff. Put the egg yolks in another bowl and mix in the sugar and vanilla extract. Now add the the stiffened egg whites and mix everything together. Finally, fold in the flour.
  2. Spread the dough out on a baking tray and bake at 375°F for 8-12 minutes. When done, remove the dough from the tray and roll it up. Wrap a clean dish towel around the dough roll to hold it together.
  3. Next, put the cream, powdered sugar and vanilla extract together in a bowl and beat until the cream becomes stiff. Then add the raspberries and gently mix them in.
  4. Unroll the dough and spread a layer of raspberry jam all over one side. Then add the raspberries and cream mixture, before rolling the dough back up again.
  5. For the final step, beat cream, icing sugar and vanilla extract together until stiff. Then spread over the sponge roll and garnish with a few fresh raspberries.

Of course, you don't have to use raspberries for the filling: other berries work just as well. Maybe you can experiment with a colorful mix of different fruits? The results will alway taste amazing!
