4-In-1 Puff Pastry Roll Up: Enjoy All Of Your Favorite Fillings At Once

Are you dying to serve a finger food that's more than just an appetizing snack? Sure, it tastes good, and that's the most important thing, but don't you want your appetizer to stand out? Wouldn't it be nice to have the guests see your food from across the room and say, "That's what I want to eat!"? This hearty roll up will give you exactly that, thanks to its four tasty fillings that offer something for every palate.

You'll need:

  • 2 puff pastry sheets
  • 1 egg yolk

For the spinach ricotta filling:

  • 7 oz spinach leaves
  • salt & pepper
  • nutmeg
  • 2 tbsp pine nuts
  • 3½ oz ricotta

For the cheesy meat filling:

  • 5½ oz ground meat
  • 2½ oz shredded mozzarella
  • 2 tbsp BBQ sauce (optional)

For the pumpkin filling:

  • 5½ oz pumpkin, cubed
  • 1 onion, diced
  • 2 tbsp balsamic vinegar
  • 1 tbsp sugar
  • 3½ fl oz vegetable stock
  • salt & pepper
  • 2½ oz parmesan

For the cheesy potato filling:

  • 5½ oz potatoes, boiled
  • 2 tbsp crème fraîche
  • 2½ oz cheddar
  • salt & pepper

Here's how:

1. Cut the first puff pastry sheet into 4 sections lengthwise — one for each filling.

Cook the spinach leaves in a little oil and season with salt, pepper, and nutmeg. Add the pine nuts and ricotta and mix it all together. Spread the spinach ricotta filling on one puff pastry section, roll it up, and set it aside.

2. Cook the ground meat with the mozzarella, spread it over the next puff pastry section, roll it up, and set aside. Feel free to add 2 tbsp of BBQ sauce to spice things up a bit!

3. Cook the pumpkin cubes together with the onion and parmesan cheese and season with balsamic vinegar, sugar and vegetable stock. Spread the mixture over the next puff pastry section, roll it up, and set aside.

4. Add the crème fraîche, cheddar cheese, salt, and pepper to the boiled potatoes and mash it all together. Spread the mixture over the final puff pastry section, roll it up, and set aside.

5. Lay the 4 rolls on top of each other on the second puff pastry sheet and roll the entire thing up.

6. Cut the giant roll into even pieces.

7. Lay the cut slices on a sheet pan with parchment paper, brush with an egg yolk, and bake at 350°F for 20 minutes.

8. Done! Enjoy four of the tastiest treats you've ever had all at the same time!
