Cheesy Potato Towers: Stack 'Em If Ya Got 'Em!
If you have a potato fan at home (or maybe more than one!), you're going to have some happy campers after you put this fun-sized treat on the table. And the even better news is, all you have to do is slice, sprinkle, stir, stack, and stick it in the oven!
You'll need (for 6 portions):
- 3 large potatoes
- 1/3 cup grated parmesan
- 2 cloves chopped garlic
- 1 tbsp mustard
- 1 tsp salt
- 1 tsp pepper
- 3 1/2 tbsp olive oil
- 1 cup grated mozzarella
- 6 slices ham
- fresh sprig of rosemary
- Cut the potatoes in thin slices, toss into a large mixing bowl and stir in the parmesan, garlic, mustard, salt, pepper and olive oil.
- Press a couple of potato slices in a muffin tray, add layers of grated mozzarella and ham in between more potato slices and finish off with cheese.
- Place a sprig of rosemary on each stack and bake at 375°F for 40 minutes.
