Potato Lasagna: A Delicious Twist On The Classic Italian Dish
When you think of Italy, so much imagery runs through your head: sunshine, olive orchards, excellent ice cream, pizza and pasta. You can never get enough of the last two items on that list. But if you start to get tired of always having the same dishes (no matter how delicious they are), then you'll love this easy recipe. This dish brings together an Italian culinary tradition with one of America's favorite vegetables: the potato lasagna.
You'll need the following:
- 3 large, waxy potatoes
- 18 oz Bolognese sauce
- 2 oz baby spinach
- 10 oz grated cheese
Here's what you do:
- Wash the potatoes and cut them into very thin slices. Potatoes don't ave to be peeled and can be consumed with the skin.
- Add a layer of potatoes to the bottom of a lasagna baking dish and pour the Bolognese sauce on top of the potatoes. Then add on the baby spinach and a layer of cheese.
- Keep layering the ingredients like this until the baking dish is filled to the top: potatoes, sauce, spinach, cheese. The final layer should consist of cheese.
- Now bake the potato lasagna in the oven for one and a half hours at 320°F.
This twist on lasagna is not just easy to make; it's also an excellent alternative if you don't have any lasagna sheets at home. But make sure the potato slices are as thin as possible so that they bake all the way through.
