We don’t say this lightly, but our potato and avocado gratin with salmon is enough to rock worlds: A golden and fragrant crust that gives way to poatoes and salmon swimming in a cream sauce with a fresh avocado twist. Avocado & Potato Gratin with Salmon: Superfood in Casserole Form
If you’re like me, you’ve always associated avocados with cold dishes. On bread, in salads, or even as a dip, avocado simply makes everything better. But have you ever eaten avocado warm? I hadn’t, until I discovered this casserole. The innovation, like so many, was born from necessity. I found myself, once again, with too many avocados on my hand! They had ripened at the same time and I was long running out of salad ideas. A big fan of salmon and avocado, I thought, well what would happen if we bring this into a casserole? Thus came the potato and avocado gratin with salmon.
And it really packs a punch. Not only does it taste absolutely amazing. Avocado not only provides a particularly velvety consistency, but also brings an extra portion of healthy, unsaturated fatty acids into play. The same also goes for the salmon, because it is rich in omega-3 fatty acids which promote healthy blood pressure levels. Omega-3s are especially important as they can’t actually be produced by the body itself!
The good news is that our potato and avocado gratin with salmon will make sure you’re well taken care of. And not only that, but it will also leave you full and satisfied, If that wasn’t good enough, it’s also easy to make: Layer potato slices in a baking dish, top with salmon and avocado cubes, and pour your homemade cream sauce on top. The whole thing goes into the oven at 350°F for about 45 minutes, until the surface is golden brown and the potatoes are soft. The smell alone will make your mouth water. And just wait until you try the first bite. Heavenly!

POTATO & AVOCADO GRATIN WITH SALMON

INGREDIENTS
- 1 tbsp butter for the dish
- 1 lb waxy potatoes (e.g. Yukon gold)
- 2 cloves garlic
- 3 sprigs thyme
- 6 to 7 oz salmon fillet
- Salt & pepper, to taste
- 2 avocados
- 1 cup heavy cream
- 2 cups grated cheese, preferably Gruyère
INSTRUCTIONS
- Preheat the oven to 350°F.
- Grease a baking dish with butter.
- Peel the potatoes and cut them into thin slices. Peel and finely chope the garlic. Remove the thyme leaves from the sprigs.
- Cut the salmon into small pieces and season with salt and pepper. Halve the avocados, remove the pit and dice.
- In a bowl, combine the heavy cream with 1 cup grated cheese, salt, pepper, garlic and thyme.
- Layer the potatoes, avocado and salmon pieces in the baking dish. Pour the seasoned cream over the top and sprinkle with the remaining grated cheese.
- Bake the casserole for about 40-45 minutes, until the potatoes are tender and the cheese is golden brown.
