Tropical pancakes with a juicy pineapple center

Preparing food in the summertime can be somewhat easier than in other seasons. Meals aren't so heavy on the stomach, but rather more fresh and fruity, perhaps reminiscent of that last beach vacation! You can have all of this and more with this easy, yet impressive recipe for tropical pineapple pancakes.

You will need:

  • 1 and 1/4 cups flour
  • 1 tbsp. baking soda
  • 1/4 cup sugar
  • 1 tbsp. baking powder
  • pinch of salt
  • 1 cup milk
  • pineapple rings
  • cocktail cherries

Here's how:

  1. Mix the flour, baking soda, baking powder, sugar, milk, and salt together in a bowl. 
  2. Pour a small portion of the mixture into a hot frying pan.
  3. Place a pineapple ring in the center of the pancake batter and add a cocktail cherry in the middle of the pineapple ring.
  4. Once the bottom is golden brown, flip the pancake and cook the other side.

Serve the pancakes with syrup and imagine yourself on a tropical island! You can also add other fruit directly to the batter, like apples, berries or whatever you might be craving. Try it out, and properly jazz up every pancake from this moment on!
