Tropical pancakes with a juicy pineapple center

Preparing food in the summertime can be somewhat easier than in other seasons. Meals aren’t so heavy on the stomach, but rather more fresh and fruity, perhaps reminiscent of that last beach vacation! You can have all of this and more with this easy, yet impressive recipe for tropical pineapple pancakes.

Tropical Pineapple Pancakes

These yummy pancakes are not only fruity, but will surely turn heads! I can't get enough!

Ingredients
  

  • 1 1/4 cups flour
  • 1 tbsp baking soda
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1 pinch salt
  • 1 cup milk
  • 4 rings pineapple
  • 4 pieces cocktail cherries

Instructions
 

  • Mix the flour, baking soda, baking powder, sugar, milk, and salt together in a bowl.
  • Pour a small portion of the mixture into a hot frying pan. Place a pineapple ring in the center of the pancake batter and add a cocktail cherry in the middle of the pineapple ring. Once the bottom is golden brown, flip the pancake and cook the other side.
  • Serve the pancakes with syrup and imagine yourself on a tropical island! You can also add other fruit directly to the batter, like apples, berries or whatever you might be craving.
