Baking cookies without sugar? Who would have guessed it can be so yummy! With our recipe for crispy oatmeal & seed breakfast cookies, you can satisfy your sweet tooth without the guilt. A banana and a little honey provide the sweetness in these cookies – that’s it! And the rest? They consist of hazelnuts, rolled oats, sesame seeds, flaxseeds, dried cranberries, and spices. Grab your baking supplies and whip up a batch of these oatmeal & seed breakfast cookies.

To make these cookies, start by mashing the banana and mixing it with honey and an egg. In a second step, add the rolled oats, hazelnuts, cranberries, sesame seeds, flaxseeds, cinnamon, salt, and baking powder and mix everything into a smooth dough. Using a spoon, scoop out small, individual portions, place them on a baking sheet, and flatten them with your hands. Make sure to leave some space between the dough portions.

Let the oatmeal & seed breakfast cookies cool completely after baking before trying the first one. They are delicious as a sweet snack in between meals, but are also ideal as a small breakfast.

INGREDIENTS

  • 1 ripe banana
  • 1 egg
  • 2 tbsp honey
  • 1 1/2 cups rolled oats
  • 1/2 cup hazelnuts
  • 1/2 cup dried cranberries
  • 2 tbsp sesame seeds
  • 1 tbsp flaxseeds
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 1/2 tsp baking powder

INSTRUCTIONS

  1. Preheat your oven to 350°F with top and bottom heat. Line a baking sheet with parchment paper.
  2. Peel the banana and mash it in a bowl. Add the egg and honey, and mix well.
  3. Stir in the oats, hazelnuts, cranberries, sesame seeds, flaxseeds, cinnamon, salt, and baking powder until evenly combined.
  4. Using a spoon, scoop small, even portions of dough onto the baking sheet. Leave some space between them, and gently flatten them.
  5. Bake for 15-18 minutes, or until golden brown. Let them cool completely.
