Mini Banana Pancakes: Ready with 6 Ingredients
Ever since I became a mom, and especially since my little one started eating, I’ve been exploring the topic of nutrition in a whole new way. And I’m always looking for new ideas on how to offer my child a variety of foods.
My daughter loves pancakes and bananas, so it just made sense to combine the two and make her mini banana pancakes for breakfast. And what can I say? The pancakes are a classic, for a reason. I now make this sweet breakfast at least every other week. When I arrange the little pancakes on her small plate with some fruit and serve them to her, she wiggles back and forth on her high chair with anticipation. It’s one of my favorite sights!
But, adults adore mini banana pancakes just as much, by the way. They taste like fried bananas served in many Asian and Indian restaurants. Though they are less sweet than this recipe.
Whether more or less sweet, mini banana pancakes only require a few ingredients to make: Spelt flour, oat milk, egg, baking powder, and of course the bananas are all you need! There’s still plenty of room to serve them with delicious toppings like banana slices, fresh berries, or a dollop of yogurt.
Currently, my daughter is still too young for this, but I’m already looking forward to when she can soon help us prepare the mini banana pancakes. If your sous-chefs are old enough, invite them to dip the banana slices in the batter or watch the grown ups flip them with pizazz. The breakfast makes a little kitchen adventure for the whole family!

Mini Banana Pancakes
Ingredients
- 2 bananas
- 1 egg
- ¾ cup spelt flour
- 1 tsp baking powder
- ½ cup plant-based milk
- 1 tbsp butter
Instructions
- Peel the bananas and slice them into approximately ½-inch thick rounds.
- In a large bowl, whisk together the egg, spelt flour, and baking powder. Pour in the plant-based milk and stir until you have a smooth, thick batter. The batter should be creamy enough to stick well to the banana slices. If it's too runny, mix in an additional teaspoon of flour.
- Dip each banana slice into the batter, ensuring it’s fully coated. For better coating, use a fork or spoon to dip the slices.
- In a pan, heat the butter over medium heat. Gently place the batter-coated banana slices in the pan and cook until golden brown, about 2 minutes per side. The pancakes should be nice and fluffy, and lightly caramelized.
- Stack the mini banana pancakes on a plate and top with maple syrup, fresh berries, a sprinkle of cinnamon, or any other toppings you enjoy.
