MEXICAN-STYLE GROUND BEEF & POTATO CASSEROLE

INGREDIENTS

  • 2 lbs potatoes
  • Salt
  • 2 onions
  • 2 cloves garlic
  • 1 tbsp canola oil
  • 1.5 lbs ground beef
  • 2 tbsp tomato paste
  • 1 (14 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans
  • 1 (8 oz) can corn
  • Pepper, to taste
  • ½ tsp ground cumin
  • Chili powder, to taste
  • 1 cup Shredded cheese

INSTRUCTIONS

  1. Peel the potatoes and cook them in salted water until tender. Drain and cool slightly.
  2. Peel and finely chop the onions and garlic. Heat some oil in a pan and brown the ground beef. Add the onions and garlic. Sauté briefly.
  3. Stir in the tomato paste and deglaze with the diced tomatoes. Mix the sauce with the beans and corn. Season with salt, pepper, cumin, and chili powder.
  4. Cut the potatoes into cubes and combine everything in a large baking dish. Sprinkle the cheese on top and bake the casserole at 350°F for about 40 minutes.
