Better than Mom's: Meatloaf pepper rings

Did your mother make the best stuffed peppers in the world? Do you often crave them, but feel uncertain as to whether your cooking skills would ever compare? If you answered yes twice, you must dare to attempt this simple, delicious recipe. One bite, and mama’s peppers become a distant memory.  

You will need (for four servings):

  • 2 peppers
  • 1 lb ground beef
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. cayenne pepper
  • 1 garlic clove
  • 1 tsp. paprika
  • 1 tbsp. breadcrumbs
  • 3/4 cup parmesan
  • 1/2 cup tomato sauce 
  • 1 cup grated cheese

Here's how:

  1. Wash the peppers and cut them into four thick rings. Remove the seeds, and dice the leftover pepper. 
  2. In a large bowl, add the ground beef, diced pepper, spices, garlic, breadcrumbs, and parmesan, and mix well. Transfer the mixture evenly to the pepper rings, filling them. 
  3. Heat a bit of vegetable oil in a pan, and fry the stuffed peppers on both sides.  
  4. Place the peppers on a baking tray, and add tomato sauce and grated cheese to the top of each. Bake in the oven for 30 minutes at 300 °F.
