Layer Your Casserole With Meatballs, Potatoes & A Creamy Tomato Sauce

Who doesn't love a homemade, hearty casserole with fresh ingredients that's also easy to prepare? As the temperatures begin to drop and it starts to gets cooler outside, this hot meal is ideal. Little effort, amazing flavor, and an eye-catching design - what's not to love?

You'll need:

For the meatballs:

  • 2 lbs ground meat
  • 7 oz bread crumbs
  • ½ bunch fresh parsley
  • 1 large onion
  • 1 egg
  • 1 garlic clove
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 tbsp cayenne pepper
  • salt & pepper

For the sauce:

  • 3 tbsp oil
  • 
1 garlic clove, diced
  • 13½ fl oz tomato puree
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tbsp sugar
  • salt & pepper

Here's how:

1. First prepare the meatballs. Mix the ground meat, bread crumbs, fresh parsley, diced onion, egg, diced garlic clove, and spices together in a bowl. Once everything is thoroughly mixed in, create several small, flat balls. 

2. Then peel and slice the potatoes.

3. Line a casserole dish with alternating rows of potato slices and meatballs, as shown in the video. It's best to start with the potatoes on the outside and work your way in to the middle.

4. Pour the oil in a pot and sweat the garlic. Add the tomato puree and spices and stir everything together. Pour the finished sauce evenly over the meat and potatoes.

5. Garnish the casserole with chili peppers and halved cherry tomatoes and bake for 45 minutes at 390°F.
