This Meatball & Sprout Bake Is Unusual… Unusually Tasty, That Is!

"Eat your greens!" We've all heard that at the dinner table when the kids are willfully ignoring the veggies on their plates. And of all the vegetables, Brussels sprouts are usually the ones that seem to get the least love, but with this recipe, universal loathing of sprouts will soon be a thing of the past.

You'll Need:

  • 12¼ oz Brussels sprouts
  • 2½ oz mozzarella

For the meatballs:

  • 10½ oz ground beef
  • 1 onion
  • 1 tbsp paprika

For the mashed potato layer:

  • 12¼ oz starchy potatoes
  • 4¼ fl oz milk
  • ¾ oz butter
  • ½ tsp nutmeg
  • 1 egg
  • salt and pepper

Here's How:

  1. Wash the sprouts, cut a cross on the flat of each stem, then cook them in boiling salt water for 6-8 minutes. 
  2. Mix the ground beef, onion and paprika together, then shape the meat into small balls that are roughly the size of the sprouts. Brown them in some oil. 
  3. Put the cooked potatoes in a bowl with the milk, butter, some nutmeg and a pinch of salt and pepper and mash it all together. Break the egg into the bowl and fold it into the potato.
  4. Arrange the sprouts and the meatballs in a circular dish and then spread the mashed potato on top. To finish, sprinkle it with mozzarella cheese, then cook the whole thing in a convection oven for 15 minutes at 370°F.

Even sprouts taste great when topped with cheese! And if your having doubts, remember, your little rascals don't know what's waiting for them under the cheese and potato. They'll be even more surprised when they find out what they've just scarfed down with such enjoyment!
