Mashed Potato And Sweet Potato Roll Filled With Ground Beef, Mozzarella, And Spinach

When you think of comfort food, the image of steamy, creamy mashed potatoes almost immediately comes to mind. Potatoes are delicious no matter the season, and we just can't get enough of them! For this recipe, we're taking the potato and it's sugar-sweet cousin, the sweet potato, and grating them up to make a delicious savory exterior for a jam-packed meal. This mashed potato and sweet potato roll is stuffed with a delicious, well-balanced filling, starting with some hearty sautéed spinach, adding a layer BBQ ground beef, and then rounding the whole thing off with a gooey, delicious melted mozzarella core. This dish is simple, looks great, and feeds the whole family, even if (and when) everyone asks for seconds!

You'll Need:

For the mashed potatoes:

  • 1½ lbs potatoes, grated
  • 1½ lbs sweet potatoes, grated
  • ⅓ cup corn starch
  • 1 tbsp salt
  • 4 eggs

For the spinach filling:

  • vegetable oil for sautéing
  • 1 lb frozen spinach, defrosted
  • 1 onion, diced
  • 1 garlic clove, minced
  • ¼ stick butter
  • 1 pinch of nutmeg
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp sugar

For the ground beef filling:

  • vegetable oil for sautéing
  • 1 lb ground beef
  • 1 onion, diced
  • 1 garlic clove, minced
  • 2 tsp salt
  • 1 tsp pepper
  • ⅓ cup tomato paste
  • ½ cup BBQ sauce
  • ½ red bell pepper, chopped
  • 2 tsp sugar

For the cheese filling:

  • 10 mozzarella pearls

Here's How:

1. Preheat the oven to 325°F. For the mashed potatoes, peel the potatoes, grate them directly into a kitchen towel, and squeeze out any excess liquid. Transfer the grated potatoes to a large mixing bowl.

2. Add the corn starch, salt, and 2 eggs to the grated potatoes and stir until combined.

3. For the mashed sweet potatoes, peel the sweet potatoes, grate them directly into a kitchen towel, and squeeze out any excess liquid. Transfer the grated sweet potatoes to a large mixing bowl.

4. Add the corn starch, salt, and 2 eggs to the mixing bowl and stir until combined.

5. Line a baking tray with parchment paper and cover it with the 2 types of mashed potatoes. Start by spooning regular mashed potatoes into one corner of the baking tray, then alternate between diagonal rows of mashed potatoes and mashed sweet potatoes until the baking tray is covered. Transfer the baking tray to the oven and bake at 325°F for 15 minutes.

6. For the spinach filling, defrost the spinach and drain out any excess moisture. Heat a pan on the stove with some vegetable oil and sauté the minced garlic and diced onion until they become translucent. Add the drained spinach to the pan and season with salt, pepper, sugar, and nutmeg. For the ground beef filling, heat a pan on the stove with a small amount of vegetable oil and fry the ground beef. Add in the minced garlic and diced onion and continue to sauté until the beef browns slightly. Add in the tomato paste, BBQ sauce, and chopped red bell pepper, then season the ground beef mixture with salt, pepper, and sugar.

7. Once the potatoes have baked, remove the baking tray from the oven and position it vertically on your work surface. Spoon the cooked spinach filling onto the lower section of the mashed potatoes and spread it around evenly, leaving 34 inches uncovered at the top. Add a layer of ground beef filling on top of the layer of spinach.

8. Make a horizontal row of mozzarella pearls near the bottom of the baking tray on top of the ground beef layer, then use the parchment paper beneath the mashed potato layer to help roll everything up into a snug log.

9. Transfer the baking tray to the oven and bake the mashed potato roll at 325°F for 10 minutes.
