In An Orderly Fashion: Macaroni Casserole

Love a balanced meal, but despise the cleanup that comes with it? This recipe not only requires very few dishes, but it's also incredibly easy to make. To casserole lovers everywhere: prepare to be impressed. 

You will need (for 4 servings):

  • 1 eggplant
  • salt and pepper
  • 10 oz cooked long macaroni
  • 12 slices ham
  • 6 eggs
  • 1 cup cream
  • 2/3 cup parsley
  • 1 garlic clove, chopped
  • 1 and 1/4 cups grated mozzarella

Here's how:

Cut the eggplant into thick slices and sprinkle with salt.

Place the cooked macaroni in three layers in a bread pan, followed by a layer of eggplant. 

Tightly roll up the ham slices and create a layer on top of the eggplant. Repeat the whole layering process, ending with a layer of macaroni at the very top of the pan. 

In a bowl, mix the eggs, cream, parsley, garlic, and salt and pepper. Pour the mixture over the macaroni and finally, sprinkle the mozzarella cheese over the top. 

Bake for one hour at 320°F. 

Alternatively, this recipe can be made using other meat and veggies. The egg and cream mixture can also be poured onto each individual ayer for better distribution. Once finished, cut into slices, serve with a bit of fresh salad, and enjoy!
