Mac & Cheese Pancakes: Dreams Really Do Come True

There are certain foods that will forever be hard to resist: pizza, pancakes, warm chocolate cake, macaroni and cheese... the list goes on. Though they all score high on the taste scale, this does not necessarily mean that two or more of these dishes should be served on the same plate, let alone together! But then there are those sweet, sweet times when they make the perfect combination. While this recipe might seem a bit odd at first, you'll certainly be happy you took the risk! 

You'll need (for 3 portions):

  • 1 cup flour
  • 1 tbsp brown sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 7 oz yogurt
  • 1 egg
  • 3 tbsp melted butter
  • 1/3 cup water
  • 9 oz cooked macaroni noodles
  • 3 oz shredded cheese
  • oil for the pan

Here's how:

  1. Mix the dry ingredients in a bowl: flour, brown sugar, baking powder, and salt. In a second bowl, mix the yogurt, egg, melted butter, and water thoroughly. Pour the dry ingredients from the first bowl into the yogurt mix, and mix until smooth.   
  2. Now fold the macaroni noodles along with the cheese into the batter.
  3. Finally, spoon the macaroni batter into a heated frying pan, shape into a circle, and cook until golden. 

The savory flavor of macaroni and cheese combined with that perfect pancake shape and stackability — what more could you ask for? It’s too bad that all tasty treats don't merge so well. While pizza à la mode may, um, remain on the sidelines, mac & cheese pancakes can certainly take their place on your list on menu favorites. Enjoy!
