Mac And Cheese Nuggets With A Crispy Outer Shell & Melted Cheese Center

Pasta is so versatile, it's become a mainstay of personal recipe books the world over. A tried and tested favorite is macaroni and cheese. You can't do much to top that, but we've given it a try here — mac and cheese in a coating of deep-fried crispy breadcrumbs.

You'll need (for 6 portions):

  • 1½ tbsp butter
  • 8.5 fl oz milk
  • 1½ cups macaroni
  • 2 cups cheddar, grated
  • 6 cubes of cheddar
  • flour
  • egg, beaten
  • breadcrumbs 
  • vegetable oil for frying

Here's how:

  1. Melt the butter in a pan and add the milk. Bring the milk to the boil, stirring occasionally. Then add the macaroni and cook it until it's soft.
  2. Now add the cheese and stir it in with the milk and macaroni until you have a creamy sauce. Then set aside to cool for 45 minutes.
  3. For the next step, press the macaroni into a muffin pan. Place a cube of cheddar in the middle of each portion and then cover this with more macaroni. Then freeze for an hour.
  4. Once the portions are firm, remove them from the pan, and roll them first in the flour, then the egg and finally the breadcrumbs before you fry them in the hot oil.
