The tangy freshness of lemon and the gentle scent of lavender are reminiscent of vacations in southern France, or at least, days spent relaxing. Enjoy them with a leisurely afternoon tea, at a picnic, or take them as a snack to the office. Wherever they go, these bright cookies are sure to delight!
Lemon Lavender Cookies: Once Tried, Forever Loved
In the past couple years, lavender treats have really taken off. From coffees, to lattes, cakes and cookies. The craze is understandable, given the herbs beautiful scent, gorgeous purple color, and unmistakable taste. Our cookies are all about balancing, with the laid-back lavender being lightened and brightened with lemon.
To bake the lemon lavender cookies, you can use fresh lavender blossoms or dried ones. If you have lavender growing at home in your gardens, you can even try your hand at drying them at home! But, for ease and comfort, simple dried lavender blossoms will do just as nice. Given that they will be used directly in the batter, it’s best to look for organic quality.
Preparing our lemon lavender cookies is really simple. It’s best to crush the blossoms with a little sugar using a mortar and pestle. This will give their cookies their great aroma. Now, zest two lemons and juice them. Then combine the remaining ingredients with the lavender blossoms, lemon zest, and juice. Knead until a smooth dough forms, then wrap it in foil. The batter will need to refrigerate for half an hour. Now all you have to do is roll it out, cut out the cookies, and bake them in the oven for almost half an hour.

Lemon Lavender Cookies
Ingredients
- 2 tsp tsp dried lavender blossoms
- 2 tbsp sugar
- 2 organic lemons zest
- 1 cup all-purpose flour
- ¼ cup neutral oil
- 2 tsp lemon juice
Instructions
- Preheat oven to 325°F and line two baking sheets with parchment paper.
- Using the mortar, crush the lavender blossoms with 1 tsp sugar briefly.
- Wash the lemons with hot water and zest them. Juice ½ a lemon.
- Add all ingredients to a bowl and knead until a smooth dough forms.
- Wrap the dough in plastic wrap and place in the refrigerator for at least 30 minutes.
- Flour your work surface and roll out the dough. Cut out round cookies with cookie cutters or a glass.
- Place the lemon lavender cookies on the baking sheets. Refrigerate for another 10 minutes.
- Finally, bake for 25 minutes, until the edges are golden brown.
- Let cool before serving.
