Lemon & Garlic Butter Marinated Steak Bites & Zoodles

You must have heard of zoodles by now – the low-carb alternative to pasta featuring spiralized zucchini noodles instead of starchy wheat flour. If you want to indulge without the guilt, then this is the recipe for you! Smothered steak and pasta may sound like a great idea at first, but the end result often leaves us feeling heavy and stuffed, so if you want a healthier version of a hearty meal, you'll love our low-carb recipe that will keep things light and refreshing.

You'll Need:

For the steak bites:

  • 16 oz sirloin steak
  • 4 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp chili sauce
  • juice of ½ lemon
  • 2 tbsp butter
  • 2 tsp minced garlic

For the zoodles:

  • 2–3 zucchini
  • 1 tbsp butter
  • 4 tbsp beef or vegetable broth
  • 1½ tsp crushed red pepper
  • juice of ½ lemon
  • 1 tbsp chopped parsley
  • 1 tsp thyme

Here's How:

1. Cut the steak into cubes. Mix the soy sauce, chili sauce, olive oil, and lemon juice together and let the steak bites marinate in it for at least 15 minutes.

2. Cook the steak bites in a pan over medium heat, making sure not to crowd the pan. Once the meat has browned, add the garlic and butter.

3. Cut the zucchini into long thin strips with a spiralizer or grater. If you don't have one on hand, you can also use a drill.

4. Add the butter, broth, crushed red pepper, lemon juice, and remaining marinade to a saucepan and let everything simmer over medium heat. Add the zoodles, and once the liquid has slightly reduced, stir everything together and then add the thyme and parsley.
