The highlight is clearly the crumble topping. The combination of rolled oats and lemon zest provides a small explosion of flavor with every bite. If you always nibble off the crumble topping on a cake first, you absolutely have to try these lemon crumble bars with yogurt.

This recipe is simple too, including prep time, it should be ready in about an hour. Plus, you can adjust this recipe to your dietary needs and preferences! Margarine can easily be swapped in place of butter, while opting for colorful sprinkles can add a whimsical twist to the dish. For more flavor, drizzle a lemon glaze on top of the crumble, which will intensify the bars without overwhelming them. Lemon Crumble Bars with Yogurt

Ingredients
  

For the dough:

  • ½ cup Butter
  • ¾ cup Sugar
  • 3 Eggs
  • cup Yogurt
  • ½ cup Lemon juice
  • 1 Organic lemon zest
  • 2 cups All-purpose flour
  • cup Cornstarch
  • 2 tsp Baking powder
  • 1 Apple
  • 1 Pinch of salt

For the crumble:

  • ½ cup Rolled oats
  • ¼ cup Butter cold
  • ¼ cup Sugar
  • ¼ cup All-purpose flour
  • 1 tbsp Lemon zest
  • 1 Pinch of salt

Instructions
 

  • First, wash the apple and lemon thoroughly. Then grate the apple, zest the lemon, and set aside.
  • Cream the butter and sugar in a bowl until light and fluffy. Gradually add the eggs.
  • Then add the yogurt, lemon juice, lemon zest, and grated apple.
  • In a second bowl, mix the flour with cornstarch, baking powder, and a pinch of salt. Combine the flour mixture with the creamed butter mixture using a hand mixer until smooth.
  • Pour the batter into a square baking pan (approximately 9×9 inches) and smooth the top. Preheat oven to 350°F.
  • While the oven preheats, prepare the crumble. Combine the rolled oats, cold butter, sugar, flour, lemon zest, and a pinch of salt with your hands until a crumbly dough forms. Sprinkle evenly over the cake batter.
  • Bake for about 40 minutes. Let cool completely and enjoy.
