Keto Beef Burrito In A Cheese Shell With Homemade Guacamole And Pico De Gallo

Life without cheese is possible, but what fun would that be? If you love cheese as much as we do, listen up! Ask yourself: what's better than a Mission-style burrito with a ton of ooey, gooey cheese inside? A burrito that ditches the heavy carbs inside and swaps the tortilla out for a cheese shell, of course! Instead of a regular flour tortilla, we're using cheese as our burrito vessel and then filling it with seasoned ground beef, homemade guacamole, and fresh pico de gallo. ¡Ay, caramba!

You'll Need:

For the cheese tortilla:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded white cheddar cheese

For the guacamole:

  • 1 avocado
  • ½ chili pepper
  • lime juice
  • salt & pepper to taste

For the seasoned ground beef:

  • 6 oz ground beef
  • paprika to taste
  • cumin to taste
  • chili powder to taste
  • salt & pepper to taste

For the pico de gallo:

  • 5 grape tomatoes, quartered
  • 1 tbsp chopped cilantro
  • 1 garlic clove, minced
  • ¼ green bell pepper, diced
  • 1 small red onion, diced
  • salt & pepper to taste

For the filling:

  • 2 lettuce leaves
  • 2 slices Monterey Jack
  • guacamole
  • seasoned ground beef
  • pico de gallo

Here's How:

1. Line a sheet pan with parchment paper and lightly grease it. Sprinkle the shredded cheddar cheese in diagonal lines across the pan, alternating colors. Transfer the pan to a preheated oven set to 400°F and cook for 15 minutes.

2. For the homemade guacamole, add the avocado, chili pepper, lime juice, pepper, and salt to a bowl and mix until combined. For the seasoned ground beef, brown the ground beef in a pan and season with paprika, cumin, chili powder, salt, and pepper.

3. For the pico de gallo, add the tomatoes, cilantro, garlic, green bell pepper, and red onion to a bowl and mix until combined.

4. Carefully remove the parchment paper with the cheese shell from the sheet pan. Place 2 lettuce leaves and 2 slices of Monterey Jack cheese in the middle.

5. Spread the guacamole on top of the cheese before adding the seasoned ground beef.

6. Spoon some fresh pico de gallo on top of the ground beef and roll the cheese shell into a burrito. Twist both ends of the burrito to make it look like a giant piece of candy.
