Inside-Out Steak Quesadilla

Ingredients:
- 1 lb beef steak
- ½ cup shredded Monterey Jack cheese
- ¼ red onion, sliced
- 4-6 cherry tomatoes, quartered
- 1 tbsp corn kernels
- 1 jalapeño, sliced
- 3 tbsp salsa
- ½ cup shredded cheddar cheese
- flour + egg + corn tortilla strips for the breading
- sour cream & cilantro to garnish
Instructions:
1. Butterfly the steak, place it between 2 pieces of plastic wrap, and use a meat tenderizer to flatten it.
2. Remove the top piece of plastic wrap and top one side with the mozzarella, red onions, tomatoes, corn, jalapeños, salsa, and cheddar cheese.
3. Fold the empty side of the meat over the toppings and place the stuffed steak on a panini press. Cook on the highest setting for 10-12 minutes and then let cool for 5 minutes.
4. Set up your breading station with flour, egg, and 2 corn tortillas cut into thin strips. Dredge the stuffed steak in the flour, egg, and tortilla strips.
5. Heat some cooking oil in a deep pan to 350°F and fry the inside-out steak quesadilla in the hot oil for 3-5 minutes. Garnish with sour cream and fresh cilantro before serving.
