Cheesy Mashed Potato And Hot Dog Casserole With Ham And Eggs

Nothing says comfort food quite like mashed potatoes do. Actually, we take that back – casseroles are pretty up there on the comfort food list, too! Since they're both so delicious, we decided to combine the 2 kings of comfort food in this recipe for a mashed potato & hot dog casserole. Layers of mashed potatoes, ham, and cheese get topped off with a creamy dill sauce, hot dogs, and delicious baked egg. This creamy, rich casserole is not only hearty and filling, the preparation technique we're about to show you makes its presentation unlike anything you've ever seen before. You'll Need:

For the mashed potatoes:

  • 4½ lbs potatoes, peeled & boiled
  • ⅓ cup corn starch
  • ½ stick butter
  • 1 tsp salt
  • ½ tsp pepper
  • 3 slices of ham
  • 1½ cups shredded cheese

For the creamy dill sauce:

  • ⅔ cup heavy cream
  • 2 tbsp chopped dill
  • salt & pepper to taste
  • 2 tsp flour

For the topping:

  • 6 hot dogs
  • 1½ cups shredded cheese
  • 6 eggs

Here's How:

1. Make a shallow, long cut in the skin of the potatoes and boil them for about 30 minutes, then rinse them with cold water – this makes it easier to remove the skin.

2. Now mash the peeled potatoes and add the butter, corn starch, salt, and pepper, mixing everything until combined. Spoon half of the mash into a casserole dish.

3. Put 3 slices of ham on top and sprinkle with the shredded cheese.

4. Now add the other half of the mashed potatoes to the dish and smooth it out. With a wooden spoon, draw a few lines in the mash about 1 inch deep, creating 6 rectangles of equal size.

5. Use a shot glass to press 6 wells into the potato mixture.

6. Place 2 wooden skewers next to each other and a hot dog between them, cut the hot dog up as far as the knife goes and then shape it into a circle. Use a toothpick to secure the ends of the hot dog.

7. Repeat the same process with the other hot dogs and place them around the wells in the mashed potatoes.

8. Mix the heavy cream, chopped dill, salt, pepper, and flour, then pour the mixture into the grooves in the potato mass.

9. Also crack an egg into each hot dog circle and sprinkle more shredded cheese all around before sliding the casserole dish into a preheated oven set to 350°F for 25 minutes.
