Homemade Italian Sausage

Unusual cooking methods can really help keep things interesting in the kitchen. This recipe for homemade, succulent Italian sausages falls in said category because we're wrapping each individual sausage like a piece of candy before boiling them! Of course, all the herbs and spices we crave in salsiccia are present as well, but none of the preservatives or unnatural stuff, so check out the recipe, get inspired, and start cooking!

You'll Need (for 5):

  • 1 lb pork
  • 2 tsp black peppercorns
  • 1 tsp fennel seed
  • 1 tsp juniper berries
  • 2 tsp kosher salt
  • ¼ tsp thyme
  • ¼ tsp rosemary
  • ¼ tsp sage
  • ¼ tsp oregano
  • 1 tsp onion powder
  • 1 tbsp minced garlic
  • plastic wrap & cooking twine

Here's How:

1. Finely mince the pork.

2. Toast the peppercorns, fennel seed, and juniper berries in a pan until fragrant, then crush them and the other herbs and spices with a mortar and pestle.

3. Add the spice blend, onion powder, and garlic to the pork and mix until combined. Take a handful of the seasoned pork, form it into a sausage, wrap it in plastic wrap, and seal both ends with cooking twine. Repeat with the rest of the pork until you have 5 sausages. Boil the sausages in simmering water for 8-10 minutes.

4. To cool the sausages, thrust them into ice water for a second.

5. Remove the plastic wrap from the cooled sausages and fry them in some oil on all sides until they're nice and brown. Serve your homemade Italian sausages with potatoes and a nice salad.
