These hazelnut waffles are a moment of pure enjoyment in the morning, the kind we should all experience much more often. The nutty pastry is perfectly rounded off with a quick-to-make Greek yogurt-vanilla cream that you also won’t be able to get enough of.
The basis for these little delights is a very special waffle batter. The ground hazelnuts not only give it a wonderfully nutty taste but also ensure that the finished waffles are particularly fragrant. A pinch of vanilla extract adds a bit of sweetness and a subtle vanilla aroma that pairs perfectly with the airy cream.
It’s best to start with the vanilla cream so that it can cool a bit in the refrigerator during the rest of the process. This isn’t absolutely necessary, but I find it especially delicious when the cold cream melts a little on the fresh waffles.

- 1 Waffle Iron
Ingredients
- ⅓ cups hazelnuts coarsely chopped
For the vanilla cream:
- 1 tsp vanilla extract
- 1 cup Greek yogurt
- 1 tsp lemon zest optional, from an organic lemon
- 2-3 tbsp powdered sugar
- 1 cup heavy cream
For the waffles:
- ½ cup butter softened
- ⅓ cup sugar
- 1 pinch of salt
- ½ tsp vanilla extract
- 2 large eggs
- 1½ cups all-purpose flour
- 1 cup ground hazelnuts
- 1 tsp baking powder
- ⅔ cup milk
- ¼ cup heavy cream
- vegetable oil for the waffle iron
Additionally:
- 3-4 tbsp honey
Instructions
- Toast the coarsely chopped hazelnuts in a pan without oil until they are lightly browned and fragrant.
- In a bowl, mix the Greek yogurt and vanilla extract. Add the lemon zest and powdered sugar.
- Whip the heavy cream until stiff, carefully fold it into the yogurt mixture, and chill.
- For the waffle batter, combine the butter, sugar, salt, and vanilla extract. Then add the eggs.
- Mix in the flour, ground hazelnuts, and baking powder. While stirring constantly, pour in the milk and heavy cream until a smooth batter forms.
- Preheat the waffle iron and brush it with some oil.
- Serve the waffles with the vanilla cream, sprinkle with some toasted hazelnuts, and drizzle with honey.
