Hazelnut Pastry Rolls With Lemon Icing

This delectable hazelnut pastry is as simple as it is ingenious. The pastry dough is super easy to make, and the hazelnut filling gives these rolls a terrific crunch. There's nothing better than homemade baked goods, and that's a fact!

You'll Need:

For the pastry dough:

  • 4 cups flour
  • 1 egg
  • ½ stick butter, softened
  • 1 cup lukewarm milk
  • ¼ cup sugar
  • 1 cube (⅔ oz) fresh yeast
  • 1 whisked egg yolk for the egg wash

For the hazelnut filling:

  • 2¼ cups hazelnut flour
  • 1¾ cups chopped hazelnuts
  • ⅓ cup brown sugar
  • ⅓ cup milk
  • ½ stick butter, melted
  • ⅓ cup sugar

For the lemon icing:

  • 1 cup powdered sugar
  • 3-4 tbsp lemon juice

Here's How:

1. For the pastry dough, pour the flour on top of your work surface, form a well in it, and add the egg and softened butter. Dissolve the sugar and fresh yeast in lukewarm milk and pour the mixture into the well. Knead everything into a smooth dough and let rise covered in a warm place for 30 minutes.

2. Flour your work surface and roll out the pastry dough into a 20 x 16-inch rectangle.

3. For the hazelnut filling, combine the hazelnut flour and chopped hazelnuts in a bowl. Add the brown sugar, milk, melted butter, and sugar and mix well. 

4. Spread the hazelnut filling evenly over the pastry dough.

5. Roll up the pastry dough from the bottom, cut the log into 2-inch-thick pieces, and transfer the pastry dough pieces to a baking tray lined with parchment paper. Press the end of a wooden spoon into the middle of each dough piece and let rise for another 15 minutes.

6. Brush the egg wash over the dough, transfer the baking tray to a preheated oven, and cook at 325°F for 20 minutes. Mix the powdered sugar and lemon juice together and drizzle the lemon icing over the warm hazelnut pastry rolls.

You could also add ground almonds to the nut filling. Or use pecans instead of hazelnuts. In terms of nuts, there really are no limits, so go nuts!
