Juicy Hasselback Pork Roast And Rosemary Potatoes

 
A good roast dinner recipe is always something you want to have ready in your back pocket, especially when you have family or friends visiting. This is the time of year that calls for recipes with a real wow factor — ones that require a little bit of patience, but are a unique and culinary delight. This delicious stuffed pork roast served with rosemary potatoes and a homemade sauce is one of those perfect festive dishes!

You'll Need:

For the marinade:

  • 3 tbsp mustard
  • 1 tbsp thyme
  • 2 tbsp salt
  • 2 tbsp paprika
  • 1 tbsp pepper

For the hasselback pork roast:

  • 3 lb pork shoulder
  • 2 cups broth
  • ¾ cup red wine
  • 4 onions
  • 8 slices of Swiss cheese

For the rosemary potatoes:

  • ⅓ cup vegetable oil
  • 1 tbsp paprika
  • 1 tbsp salt
  • 1 tsp minced garlic
  • 1 tbsp rosemary
  • 1 lb small potatoes, quartered

Here's How:

1. Combine the ingredients for the marinade and rub the paste into the pork shoulder.

2. Place the pork shoulder in a Dutch oven and pour the broth over it, followed by the red wine. Slice 2 of the onions and spread them over the meat. Cover the pot with a lid and let the pork marinate for 2-3 hours. Transfer the Dutch oven to a preheated oven and cook covered at 325°F for 2½ hours.

3. Remove the pork roast from the Dutch oven and place it on a baking tray. Make 8 evenly-spaced vertical incisions in the pork roast, making sure to only cut about ¾ of the way down through the meat. Slice the remaining 2 onions and stuff every incision with onion slices and a slice of Swiss cheese. Increase the oven temperature to 350°F, transfer the baking tray to the oven, and cook for another 10 minutes until the cheese begins to melt.

4. Pour the marinade stock from the Dutch oven into a saucepan over low heat and purée with a blender for a homemade sauce.

5. For the rosemary potatoes, combine the vegetable oil, paprika, salt, minced garlic, and rosemary. Add the quartered potatoes to the mixture and coat well. Pour the potatoes and the marinade onto a baking tray lined with parchment paper, transfer the baking tray to the oven, and cook at 350°F for 40 minutes.

6. Serve each slice of pork roast with a helping of rosemary potatoes and homemade sauce.
