Warm up with this delicious winter pie

It's not only the weather that changes in wintertime, but also clothes, heating bills, and even what we like to eat. During this time of year, many people are more attracted to warm and hearty food than to salads, for obvious reasons. But you still need your veggies to fend off those winter sniffles! So what would be more appropriate than a filling dish of veggies in a nice piping hot pie? 

You will need:

  • 3 carrots
  • 2 zucchini
  • 1 eggplant
  • 1 red onion
  • 1 portion puff pastry
  • 1 portion mozzarella
  • 12 slices ham
  • 6 oz crème fraîche
  • 4 eggs
  • salt and pepper

Here's how:

  1. Wash the veggies and cut them lengthwise into very thin strips.
  2. Press the puff pastry into a quiche pan, making sure to also cover the edge. Cut the red onion into large pieces and scatter them on the surface of the pastry. Cut the mozzarella into slices and place them on top of the onion pieces.  
  3. Line the edge of the pan with a layer of carrot slices, followed by layer of zucchini, then eggplant, and finally ham. Working in this order, from the outside in, fill the pan with rings of veggies and ham.
  4. Mix the crème fraîche with the eggs and salt and pepper. Pour the mixture evenly over the vegetable and ham layers, and then bake the pie for 30 minutes at 355 °F. 

One bite of this delicious pie, and you'll realize that it was worth the effort. Of course you can serve this dish at any time of year, but it is especially perfect for those cozy winter nights at home. Enjoy!
