Rye Sandwich Cake With Layers Of Chicken Salad & Guacamole

The best way to beat the summer heat is a with a light and refreshing sandwich that's big enough to feed the whole family. After all, rye bread, guacamole, chicken salad, and cucumbers are simply unbeatable – they look great, taste great, and even make you feel great, so dig in!

You'll Need:

1-2 rye bread loaves

For the guacamole:

  • 2 avocados
  • 2 tomatoes
  • 8 oz cream cheese
  • salt & pepper to taste
  • juice of ½ a lemon

For the chicken salad:

  • 2-3 chicken breasts (14 oz)
  • salt & pepper to taste
  • 7 oz cream cheese

Extra:

  • 
1 small heart-shaped cookie cutter
  • 1 cucumber
  • fresh herbs

Here's How:

1. Cut the bread into ¼-inch thick slices until you have 20 slices and then remove the crusts. Cut 4 small hearts into each slice and lay out a row of 4 slices on plastic wrap. Meanwhile, start season the chicken breasts with salt and pepper and cook them on both sides over medium heat. This will give them time to cool down before you prepare the chicken salad.

2. Peel and pit the avocados and add them to a bowl. Dice the tomatoes, add them to the bowl, and use a fork to mash the avocados and tomatoes together. Add the cream cheese and lemon juice, season with salt and pepper, and stir until thoroughly mixed together. Spread some guacamole over the first row of bread so that the 4 hearts are completely filled.

3. Place 4 slices of bread on top of the guacamole,

4. Shred the chilled chicken breasts and mix with the cream cheese. Spread some of the chicken salad over the bread and cover with another 4 slices of bread.

5. Continue layering until you reach the last row.

6. Now cover the savory cake with a plate or cutting board and carefully turn it over so that the hearts are on top. Slowly and gently remove the plastic wrap and smear with guacamole. Cut the cucumber into thin slices and gently press the slices vertically into the guacamole. Garnish the loaf with fresh herbs.
