Let’s face it — we’ve all bought more bread than we can eat at some point. It’s annoying, but it happens. But what to do with those rock-hard leftovers? Throwing them away is definitely not the answer. Even better when it’s a delicious one. Thus, our Greek feta bake.
Our Greek feta bake is a true flavor sensation. It’s its clever combination of tomatoes, bell peppers, feta, and, of course, plenty of olive oil that bring this dish from practical to delish. As it bakes, the bread soaks up the wonderful flavors of the tomatoes, herbs, and olives, while developing a slightly crispy crust. Just thinking about is enough to make your mouth water.
This easy dish is sure to become one of your lunch or dinner favorites, and it takes just a few steps. Grease a ceramic baking dish with some olive oil and add the sliced bread. Mix tomatoes (canned or fresh will do) with onions, garlic, bell peppers, olives, olive oil, and season well. Once thoroughly mixed, pour over the bread.
And for the crowning glory, don’t skimp on the feta cheese. It will melt into a golden brown crust and make the dish utterly irresistible, as if it weren’t already! GREEK FETA BAKE WITH BREAD

INGREDIENTS
- 5 tablespoons olive oil
- 4 slices stale bread (preferably crusty, like sourdough or country-style)
- 1 red onion
- 2 garlic cloves
- 3 chili peppers (or substitute with mild or hot peppers, to taste)
- 1 (14 oz) can whole peeled cherry tomatoes
- A few sprigs of fresh thyme
- 3 tbsp black olives, pitted
- Salt & pepper, to taste
- 10 oz vegetarian feta cheese
INSTRUCTIONS
- Preheat oven to 400°F and grease the baking dish with 1 tbsp olive oil.
- Cut the stale bread into large chunks. Place in the dish and drizzle with 2 tbsp olive oil.
- Peel the onion and garlic cloves. Slice the onion into thin rings and mince the garlic. Slice the bell peppers into thin rings.
- Heat 2 tbsp olive oil in a pan and sauté the onions, garlic, and bell peppers for 2–3 minutes.
- Add the cherry tomatoes with their juice, stir into the pan. Simmer on a low heat for 5 minutes. Season with salt, pepper, and some thyme.
- Spread the tomato mixture evenly over the bread. Scatter olives on top.
- Cut the feta into thick slices and arrange on top of the bake.
- Bake for about 25 minutes, or until the feta is lightly browned.
