Fried Deviled Eggs: Tasty Solution For Hard Boiled Egg Overload

So the Easter Bunny has come and gone. Hard boiled eggs are EVERYWHERE. How many weeks of sneaking them into the daily lunch box until they're all gone? Or... perhaps there's a better solution?

You will need (for 6 servings):

  • 3 eggs
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • salt and pepper
  • ⅓ cup flour
  • ⅔ cup bread crumbs
  • oil for frying

Here's how:

  1. Cut the hard boiled eggs in half lengthwise and set aside the yolks in a mixing bowl. 
  2. Mix the yolks with mayonnaise, ketchup, and mustard until smooth and then season with salt and pepper. Spoon the mixture into a piping bag.
  3. While heating the oil, dip the egg whites in flour, beaten egg, and then breadcrumbs. When the oil is hot, fry the breaded egg whites until golden brown. 
  4. When cooled slightly, pipe the yolk mixture into the indentation of the fried egg whites.

Now that your eggs are crispy and warm, they'll disappear quickly enough! If you want a few for yourself, you may have to hide them all over again.
