Zatar is the Arabic name for thyme, which is the main ingredient in the mixture. It also contains sumac, toasted sesame seeds, and salt, which pair perfectly with this feta cream with hot honey. The mixture has a long tradition in Levantine cuisine. There, it is often used as a topping on flatbread with olive oil. We find that in this recipe it helps bring the feta and hot honey spread into a harmony of salty, spicy, sweet, and slightly sour. If you can’t find za’atar, no need to fret. You can also use oregano, marjoram, and cumin. Just try out what works best for you with the dip and what you rounds it off appropriately, to your taste!

Spicy Feta Cream with Hot Honey

Ingredients
  

  • 1 cup feta cheese
  • ½ cup ricotta cheese
  • cup sour cream
  • salt & pepper to taste
  • 1 garlic clove
  • 1 tbsp olive oil
  • cup honey
  • 2 tbsp lemon juice
  • 2 tsp chili flakes
  • 1 tsp za'atar
  • 1 tsp sesame seeds

Instructions
 

  • In a bowl, mix the feta, ricotta, and sour cream together. Then, using a mixer or immersion blender, purée on the mix on high speed for about 2–3 minutes until creamy. Season with salt and pepper to taste.
  • Peel and finely chop the garlic. Heat some olive oil in a pan over low heat and sauté the garlic until soft and aromatic, but not browned.
  • Remove the pan from the heat and stir in honey, lemon juice, and chili flakes. Season with salt and pepper.
  • Transfer the feta cream to a bowl and drizzle generously with the hot honey. Sprinkle with za’atar and sesame seeds.
