Fresh and healthy: one-pot pasta!

This recipe requires one pot, saves time and water, and delivers a meal that's packed full of vegetable power!
You will need:
- 150 g spaghetti
- 1/2 cup mixed bell peppers
- 1/3 cup zucchini
- 1/2 red onion
- 1/2 cup broccoli
- 1/2 cup eggplant
- 5 cherry tomatoes
- 1 oz arugula
- 1 and 1/2 cups water
- 1/2 cup white wine
- 3 tbsp. vinegar
- pinch of salt
- 2 garlic cloves
- 1 tbsp. paprika powder
- 2 tbsp. olive oil
Here's how:
- Wash all vegetables and place them in a pot, followed by the dry spaghetti noodles. Add the liquid ingredients, as well as the spices.
- Bring to a boil, and stir the ingredients together. Now cover the pot and let simmer for 8 minutes.
