Baked Apples Stuffed With Boozy Braised Duck Breast
It's the same thing every year: when temperatures start to drop, appetites begin to soar. If you want to snuggle up inside with a comforting winter dish, this recipe is just the ticket! The combination of baked apples, ground duck breast, and a feel-good liquid elixir will warm you up in no time.
You'll Need:
- 2 red apples
- 1 duck breast
- 2 small shallots
- 1-2 garlic cloves
- salt & pepper to garnish
- 2 rosemary sprigs
- ⅓ cup cognac
- 1 cup chicken broth
- 2 tbsp melted butter
Here's How:
1. Preheat the oven to 325°F, cut off the tops of the apples, and set the "lids" aside.
2. Remove the apple cores, hollow out the apples with a spoon, and set the apple pulp aside.
3. Brush the insides of the apples with melted butter.
4. Dice the shallots.
5. Place the duck breast skin-side down on a chopping board and place the garlic cloves and rosemary on top of the meat.
6. Mince the duck breast, including the garlic and rosemary, with a sharp knife.
7. Add the chopped meat to the shallots and apple pulp, season with salt and pepper, and mix well.
8. Cook the ground duck mixture in a pan over medium heat, add the cognac, and flambé it.
9. Add the chicken broth to the pan and let it boil down.
10. Place the hollowed apples in a baking dish, fill them with the ground meat mixture, place the apple "lids" back on top, and cook for 20 minutes.
