You'll need:

For the flatbread:

  • 25 oz flour
  • 11.8 fl oz warm water
  • 2⅕ tsp sugar
  • 1½ sachets dry yeast
  • 1 egg
  • 1.8 oz butter
  • 0.8 fl oz oil
  • 2⅗ tsp salt
  • 1 egg yolk
  • 1 tbsp milk
  • some white and black sesame seeds

For the filling:

  • yogurt sauce
  • onion
  • iceberg lettuce
  • red cabbage
  • tomatoes
  • cucumber

Here's how:

  1. Mix the seasoning for the meat in a small bowl. Lay out a large piece of food wrap on the worktop and place the veal tenderloins next to and on top of each other so that they form a rectangle. Sprinkle half of the seasoning on the steaks. Next, spread out the ground veal on top of the steaks, then sprinkle it with the rest of the seasoning. Roll up the meat using the food wrap and close up the ends of the wrap. Freeze the meat for an hour. Now remove the food wrap and bake the meat at 375°F in a convection oven for 35 minutes. 
  2. After baking, cut the meat roll in half. Now cut the meat into thin strips using a sharp knife.
  3. Add the flour to a large bowl and make a mold in the center of it. Stir the water, sugar, and dry yeast in a smaller bowl and pour it onto the mold in the flour. Without stirring, leave the ingredients for 10 minutes. Now add the egg, butter, oil, and salt. Use an electric whisk to mix the ingredients into a dough. Leave the dough to sit for one hour in a covered bowl. Next, roll the dough out on a floured worktop and form a round shape. Spread the egg yolk and milk mixture on top of the dough. Press your fingertips into the dough at regular intervals and sprinkle the sesame seeds on top. Bake the flatbread at 375°F for 25 minutes.
  4. Now it's finally time to fill up the flatbread. First, cut it into quarters. Then spread some yogurt sauce inside the bread, filling it with the meat and vegetables.
