Prep Time: 30 minutes
Cooking Time: 20 minutes
Difficulty Level: Moderate

You'll Need:

For the ground beef & leek quiche:

  • 1 lb ground beef
  • oregano
  • paprika
  • salt & pepper to taste
  • 1 leek, sliced
  • 2 eggs
  • 3 egg yolks
  • 1 cup milk

For the pastry pockets:

  • shredded cheddar cheese
  • 1 puff pastry sheet
  • sliced red onion
  • whisked eggs for the egg wash

Here's How:

1. Preheat the oven to 350°F. For the ground beef & leek quiche, place the ground beef in a large mixing bowl and season it with oregano, paprika, salt & pepper. Heat some vegetable oil in a frying pan and sauté the ground beef, then add the sliced leek to the pan and cook everything until the leek has begun to soften.

2. Whisk together the eggs, egg yolks, and milk in a large mixing bowl.

3. Cut the puff pastry sheet into 4 equally sized squares, then cut each square in half diagonally to make triangles. Fill the triangles with shredded cheddar cheese and distribute ⅓ of the ground beef & leek mixture among each piece of puff pastry dough. Fold each piece of puff pastry dough in half and press down the edges of the dough to seal in the filling.

4. Line a quiche pan with parchment paper and spoon the remainder of the ground beef mixture onto it. Pour the egg mixture on top of the ground beef mixture and sprinkle sliced red onion and shredded cheddar on top.

5. Place the stuffed pastry pockets upright around the edge of the quiche pan. Whisk some eggs and brush the egg wash over the surface of the pastry pockets. Transfer the quiche pan to the oven and bake the crown quiche at 350°F for 30 minutes.

Bring some flair to your brunch table by serving this hearty crown quiche. Your guests will leave felling full and satisfied after getting such delicious royal treatment!
