This crêpe cake is the perfect afternoon snack

Pancakes are fantastic - especially a tall mountain of them. What's even better is a whole cake made of pancakes and this is quite easy to make. The result still looks as delicious as if you had spent hours making it!

For the cream you'll need:

  • 1/2 cup of cream
  • 1 package or 2 tsp. of vanilla sugar
  • 9 oz. of mascarpone
  • 6 tbsp. of raspberry jam

For the pancakes you'll need:

  • 2 cups of milk
  • 4 eggs
  • 2 cups of flour
  • 1/4 cup of melted butter
  • Berries as decoration (optional)

Here's what you do:

The pancake mountain will be filled with a fluffy fresh berry cream. You can make this by beating cream mixed with a package of vanilla sugar. Now mascarpone and raspberry jam (or another kind of jam) are added.

Mix the milk and eggs for the pancake batter. The cream goes into the refrigerator during this time.

Slowly pour in the flour and keep stirring otherwise clumps will form. Now add 2 packages of vanilla sugar and the melted butter to the batter. The best way to melt the butter is by sticking it in the microwave.

Now the pancakes are baked: There should be roughly 10 of them and they should be nice and thin.

After baking, you should allow the pancakes to cool off. Lay a pancake on a large plate and spread a few spoonfuls of cooled berry cream on top.

Now another pancake is placed on top and a stack starts to form. 

The pancake mountain gets covered with plastic wrap and placed in the fridge for one hour.

The pancake cake can now be decorated with fresh berries or any other kind of fresh fruit so that it looks even nicer.

When you think about cakes like this, your fantasy is going to go wild. The cream between the pancakes can be replaced with anything. What do you think of Nutella, cream cheese or ham and cheese perhaps? For the latter, you should definitely leave out the vanilla sugar from the pancakes!
