Creamy Garlic Chicken Served Over Mashed Potatoes

Sometimes the simplest recipes are the best. That's definitely the case for our creamy garlic chicken served over mashed potatoes! This recipe is easy enough for beginners to master and tasty enough to impress even the most seasoned chefs. Delicious chicken thighs get coated in a spice rub, pan fried, and then simmered in a creamy, cheesy, garlic sauce. And did we mention they get served over a bed of silky smooth mashed potatoes?! It doesn't get any more creamy or dreamy than this!

You'll Need:

For the mashed potatoes:

  • 2 lbs potatoes, peeled & boiled
  • ¾ cup milk, lukewarm
  • ¾ stick butter, softened
  • nutmeg
  • salt to taste

For the seasoned chicken:

  • 1 tsp salt
  • 1 tsp thyme
  • 2 tsp paprika
  • 1 tsp rosemary
  • 1 tsp pepper
  • 1 tsp basil
  • 6 chicken thighs
  • olive oil for frying

For the creamy garlic & herb sauce:

  • ¼ stick butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan
  • 2 tbsp chopped parsley
  • 1 tbsp fresh chopped basil (optional)

Here's How:

1. For the mashed potatoes, peel the potatoes and boil them in salted water until tender. Drain the potatoes and let them cool slightly, then add in the lukewarm milk and softened butter. Mash the potatoes and season them with freshly ground nutmeg and salt.

2. For the seasoned chicken, put the thyme, rosemary, dried basil, paprika, salt & pepper in a mortar. Use a pestle to grind up the spices and mix them together.

3. Rub the spice mixture into both sides of each of the chicken thighs.

4. Fry the seasoned chicken thighs in olive oil until golden brown on both sides, then remove the chicken thighs from the skillet and set them aside for later.

5. For the creamy garlic sauce, melt the butter in the hot skillet you used for frying the chicken and sauté the garlic and onion in it. Add in the flour and let it cook it briefly, then deglaze the pan with the chicken broth and heavy cream. Bring the sauce to a boil, stirring constantly, then let it simmer for about 10 minutes.

6. Stir in the grated parmesan cheese, chopped parsley, and chopped basil. Place the seasoned chicken thighs in the creamy garlic & herb sauce and let them cook for about 10 minutes. To serve, spoon a large scoop of mashed potatoes onto each plate, place the chicken on top, and cover the entire dish with creamy garlic & herb sauce.
