Portable and yummy: Couscous Salad To Go

Summer is here — the perfect season for enjoying a nice, fresh salad. When it's hot outside, even non-vegetarians can appreciate a lighter meal with lots of greens and veggies. And the good thing about salads is that they're easy to prepare and take with you to work, on a picnic, or wherever else you might be going to enjoy the summer sunshine. Here's one with a few heartier ingredients that is sure to hit the spot when you're in the mood for a quick and healthy lunch...

You'll need:

  • 1/2 cup cooked couscous
  • 1/4 cup pomegranate seeds
  • 2 spring onions
  • 1 orange in slices
  • 1/2 cup corn salad
  • 3 tbsp roasted cashew nuts
  • mint leaves

For the dressing:

  • 6 tbsp olive oil
  • half a lemon
  • 2 tsp honey
  • 1.5 tsp mustard
  • salt and pepper

Container:

  • 1 preserve jar

Here's how:

  1. First prepare the dressing by mixing the olive oil, honey, mustard and a squeeze of lemon juice. Add some salt and pepper.
  2. Now fill the jar. First make a layer of couscous and pour the dressing on top of it. Then add the various layers: pomegranate seeds, spring onions, orange slices, corn salad, cashew nuts and top it all off with some mint leaves.
  3. Your salad is ready to go. You can take it to work for a healthy lunch or on a picnic for a refreshing snack. Before serving, turn the jar upside down to cover it with dressing and then stir it a bit with your fork.

This recipe shows you the amounts for a single serving, so you can adjust that if you want to serve it at your next neighborhood barbecue or as a nice side dish for your family meal.
