Cinnamon Roll Pancakes And Extra Creamy Icing? We're So There!

You take flour, eggs, milk and a pinch of salt — and you have the basic recipe for pancakes. But to jazz the whole thing up a little, you can vary the recipe in all sorts of ways — and that's exactly what we're doing today. We can promise you, this cinnamon swirl of a pancake will definitely cause a stir!

You'll need:

For the batter:

  • 1 ½ cups flour
  • 2 tbsp sugar
  • 1 tsp baking power
  • 1 egg
  • 1 cup milk
  • 1 tsp vanilla flavoring
  • 1 pinch of salt

For the filling:

  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 3 oz butter, melted

For the icing:

  • 2 oz soft butter
  • 2 oz cream cheese
  • 3/5 cup icing sugar
  • 1 tsp vanilla extract
  • 2/5 cup milk

Here's how:

  1. Put all the ingredients for the batter in a large bowl and mix them until they have a smooth consistency.
  2. For the filling, mix all the ingredients together and put them in an icing bag.
  3. Pour a ladle's worth of batter into a pan with hot oil and use the icing bag to draw a spiral in the pancake, working from the center outwards. As it bakes, the filling will sink into the batter, so you can easily turn it over and cook the other side.
  4. To prepare the frosting, first mix the butter with the cream cheese and then add the icing sugar. If the frosting is too thick, you can dilute it with milk.

Slide the spiraled pancakes onto the plate and serve! For breakfast, brunch or as a dinner dessert, these Cinnamon Roll Pancakes will go down great whatever time of day it is.
