Skip The Dipping With 3 Creamy Churro Sandwiches

Is there anything more delicious than a sugary, cinnamony Spanish churro? Definitely not! So why not just take a masterpiece and improve upon it? After all, everyone loves churros, everyone loves cookies, and everyone loves sandwiches, so it was high time that all three delicious snacks were combined into one tasty handheld dessert.

You'll need:

For the churros: 

  • 8 fl oz water
  • 2 tbsp brown sugar
  • ½ tsp salt
  • 2 oz butter
  • 4½ oz butter
  • ½ tbsp vanilla extract
  • 2 eggs
  • 1½ oz sugar
  • 2 tbsp cinnamon

For the filling:

  • 7½ oz cream cheese
  • 1½ oz sugar
  • ½ tsp vanilla extract
  • zest and juice of 1 lemon
  • 5½ oz whipped cream

For the toppings:

  • 2 oz strawberries, sliced
  • 2 oz cookies, chopped
  • 2 oz oreos, chopped

Here's how:

1. Pour the water into a pot and let the brown sugar, salt, and butter melt as you bring the mixture to a boil. Add the flour and stir well until a dough forms. Remove the pan from the stove and transfer the dough to a bowl.

2. Add the vanilla extract and eggs to the bowl and stir with the dough hooks of a hand mixer. Pour the dough into a piping bag with a serrated nozzle and create 6 circles like those in the video on sheet pan lined with parchment paper. Bake the churros for 20 minutes at 375°F.

3. Mix the cinnamon and sugar in a bowl and press the top of each warm churro cookie in the mixture.

4. For the filling, mix the cream cheese, sugar, vanilla extract, lemon zest, and lemon juice together with a hand mixer. Finally, stir in the whipped cream and then pour the mixture into a piping bag.

5. Now it's time to assemble the churro sandwiches! Place the cinnamon-sugar side of a churro cookie face down on your work surface, spread a layer of the cream cheese frosting on top, and then top it off with another churro cookie. Repeat this with the rest of the cookies.

6. Finally, either dip the edges of the churro sandwiches into your assorted dessert toppings, or simply arrange the toppings on the cookie edges with your hands.. 

All three of these churro sandwiches are so delicious – it's hard to decide where to start first! And there are so many different toppings you can try this out with, so feel free to mix and match!
