Peach Bundt Cake With Cocoa Powder Layers

This recipe is perfect for all the baking rookies out there: A velvety peach bundt cake that can really hold its own against any of your grandma's offerings. And it's super easy to make – you only need a few canned peaches, a super simple cake batter, and a lot of cocoa powder. By creating different wavy layers with the cake batter and cocoa powder, the finished product ends up looking utterly gorgeous. This peach cake looks professional, but is surprisingly simple to make, so there's no reason not to give it a try!

You'll Need:

For the light cake batter:

  • 4 egg whites
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • ⅓ cup milk
  • ⅓ cup vegetable oil
  • 1 cup flour
  • ½ tsp baking powder

For the yellow cake batter:

  • 4 egg yolks
  • ⅓ cup sugar
  • 1 tsp vanilla extract
  • ⅓ cup milk
  • ⅓ cup vegetable oil
  • ¾ cup flour
  • 1 tsp baking powder

Extra:

  • ½ cup cocoa powder, divided
  • 4 canned peaches, halved
  • powdered sugar to decorate

Here's How:

1. Cut the peaches into quarters and use them to line the bundt pan.

2. Separate the eggs and add the yolks and whites to a bowl. Add the sugar to the egg whites and beat until stiff and shiny before adding the milk, vegetable oil, and vanilla extract, stirring constantly. Pass the flour and baking powder through a sieve and mix until combined. Now add the sugar to the egg yolks before adding the milk, vegetable oil, and vanilla extract and sifting the flour and baking powder into the batter. Mix until combined.

3. Preheat the oven to 350°F and pour about half of the light cake batter over the peaches in the bundt pan.

4. Sift cocoa powder all over the batter.

5. Pour half of the yellow cake batter into the cake pan before sifting cocoa powder on top of the batter.

6. Repeat the same process with the rest of the cake batters and cocoa powder until you reach the top, with the top layer being the yellow cake batter. Transfer the cake to the preheated oven and bake for 50 minutes.

Flip the cake onto a platter once it's done baking and sprinkle powdered sugar on top. This is a great dessert for any occasion, even if it's just to treat yourself and have fun in the kitchen.
