Cobblers are a fantastic summer dessert, simple to make and often filled with seasonal fruits. Today, however, we are opting for chocolate instead with our fantastic chocolate cobbler. This recipe is truly one for the books, and one for the table. It’s all the deliciousness of chocolate and all the ease of cobbler in one dish! Discover the recipe below.

A Cobbler to Remember: Our Chocolate Cobbler

We know, we know, cobblers are best known for being filled with all the best fruits summer has to offer. When thinking of the simple dessert, it’s often peaches, blackberries and the like that are attributed to it. While we love these recipes, it’s always good to shake things up. Today, we are bringing chocolate into the fold instead for a bit of that classic cacao flavor and a bit more bite to this classic dessert. Chocolate cobbler has long been a preferred dessert of the South and after you make it, you’re sure to see what the fuss is all about!

Now, traditionalists may say that this isn’t a cobbler at all, but rather some sort of lava-cake brownie hybrid. While we certianly see those points, we think its crumble topping and simple batter root it firmly in cobbler territory. Plus, the base batter of the recipe is made of all the simple ingredients that one would expect from the classic dessert! Do note: We call for buttermilk in our recipe, so make sure to have some on hand.

Adding to the beauty of this recipe is the amount of choice involved. If you are perhaps lower in the rungs of chocolate-love, simply skip the cacao in the base batter and only use it in the topping. If you find, on the other hand, that you can’t get enough chocolate, fold in semi-sweet to dark chocolate chips into the batter to ensure you have extra pockets of melt-in-your-mouth flavor. The real secret to this recipe is making sure to pour hot water on top of the batter before sending the cobbler off to the oven. While this may be counterintuitive, it is exactly what will make your cobbler deliciously gooey! Just be sure not to stir the water in. Enjoy!

Equipment

  • 1 9×13 in. baking dish

Ingredients
  

For the base batter:

  • 2 sticks unsalted butter
  • cups all-purpose flour
  • cups granulated sugar
  • tsp baking soda
  • ¼ tsp salt
  • 5 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • ½ cup semi-sweet or dark chocolate chips option

For the chocolate topping:

  • ¼ cup granulated sugar
  • ¾ cup brown sugar light or dark, depending on preference
  • ¼ cup unsweetened cocoa powder

For the liquid layer:

  • cups boiling water

Instructions
 

  • Preheat the oven to 350°F. Melt the butter in a 9×13-in. baking dish by placing it in the preheating oven. Once melted, remove from the oven and set aside.
  • Meanwhile, in a medium bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  • Stir in the vanilla and buttermilk until a smooth batter forms. Optional: Then, fold in the chocolate chips.
  • Pour the batter evenly over the melted butter in the baking dish. Do not stir.
  • In a small bowl, combine the granulated sugar, brown sugar, and cocoa powder. Sprinkle evenly over the top of the batter.
  • Heat the water until just boiling, then remove from heat. Slowly pour the hot water over the entire dish. Again, do not stir.
  • Bake the chocolate cobbler for 35–40 minutes, or until the top looks cracked and set but the bottom is still gooey and bubbling. The centre should jiggle slightly.
  • Let the cool for 10–15 minutes before serving. It will thicken slightly as it sits. Once ready, serve warm with ice cream or whipped cream. Enjoy!
